Component quantities are always defined in the Quantity column.
If process losses are expected, they will be displayed in the Loss columns.
The resulting values are automatically shown in the Input Weight and Output Weight columns.
In Input Weight mode, all defined losses reduce the total weight.
•The Input Weight corresponds to the entered component quantity.
•The Output Weight is decreased by the amount of loss.
Use this mode when the entered quantity represents the actual amount weighed in before processing.
In Output Weight mode, all losses are added back to the input weight.
•The Output Weight corresponds to the maintained (target) quantity.
•The Input Weight is automatically increased by the amount of loss.
Use this mode when the maintained quantity represents the desired output after processing.
The component quantities from the Input Weight column are used for cost calculations.
They are displayed in the Recipe → Costs module and also transferred to the Simulation and Routing modules for further analysis.
Quantities from the Output Weight column are used to calculate nutritional values in the Calculation and Declaration → GDA modules.
The resulting nutritional values are automatically transferred to the product record.
By default, ingredient quantities are calculated from the Output Weight column and displayed in the Declaration → Ingredients module.
However, the Declaration → Ingredients module also allows transferring ingredient quantities from the Input Weight, if required.
The unit of measurement in the Input Weight and Output Weight columns always corresponds to the quantity unit defined in the Recipe Definition tab.
